Wegmans is selling “veggie noodles” in 12-ounce packages for the low, low price of $3.99.
Now, there is convenience and there is downright laziness. I can’t blame the stores for offering frozen, pre-cut sweet potatoes, zucchini and squash. Obviously, customers buy them.
But you can make your own from fresh vegetables for a fraction of the price and roughly the same prep time. Get a cheap kitchen device called a spiralizer. (I bought a simple version, a Veggetti, at Wegmans several years ago.)
Buy some vegetables (a 12-ounce zucchini will run you about $1.50). Twist them through the spiralizer blade.
As chef Amanda Freitag notes, this step is actually fun – kind of like running Play-Doh through a garlic press.
Saute your veggie noodles with whatever other ingredients you want to add. (I happen to be a particular fan of zucchini noodles with anchovy butter.)
And voila. You just saved yourself a couple of bucks and you’re eating fresh produce rather than frozen.
